Coriander Rice - A southern delicacy


A very delicious and aromatic rice made in no time.

Ingredients

1 cup rice
2-3 tsp oil
Salt to taste

For grinding:

1 cup coriander leaves
1" piece ginger
1 onion
2-3 green chillies

For Tempering:

1/2 tsp mustard seeds
1 tsp Chana dal (Bengal gram dal)
1 tsp urad dal
1 tsp cashew nuts
1 tsp raisins
curry leaves- a hand full
Asafoetida- a dash

Preparation

Pressure cook the rice with 2 1/2 cups of water and let it cool. Grind the coriander leaves along with other ingredients. In a pan heat oil and temper with the given ingredients. To that add the coriander paste and salt. Let it cook for few minutes until the raw smell of the onion and coriander is gone. Add the cooked rice and fold gently until all the ingredients mix well and the rice takes up the flavours. Serve hot with pappad.

Hi... m' back with some yum clicks....

No confessions on disappearing but will try being regular (No promises too...)!!!
These pictures were taken on the way to Ooty ( hill station in Tamilnadu). Yes, I have landed in Ooty finally for my Son's schooling. Will blog from here now on for I don't know how long:)
Lots of disaster has happened with my camera, so all these pics are from my iPhone (not bad right??). After the demise of 2 cameras, hubby strictly told me not to use my talent on the SLR:)

On the way to Ooty there is a place to stop by for very good tropical fruits, dry fruits, spices, snacks and nice hot chai ofcourse.

A visit to the Brahma Kumaris Kitchen in Mount Abu- part-1

I am happy to share that the Cooking for Kids Event is running successfully since a year now.

While in mount Abu, we visited the Prajapita BrahmaKumaris Ishwariya Vishwa Vidyalaya (also called Brahma Kumaris in short) which is a unique Vishwa Vidyalaya (university) and a well known spiritual value based educational institution which has gained global acceptance and unique international recognition.
