Strawberry Muffins


There was this sale in the library where, I could pick up any number of books that would fit a bag just for a dollar or two. I grabbed some lovely cook books. One of them is Betty Crocker's Easy Entertaining. I made the Strawberry Muffins from this book.




Ingredients

3/4 cup milk
1/2 cup vegetable oil
1 cup chopped strawberries
1 tbsp grated orange peel
2 cups all purpose flour
1 cup sugar
1 tbsp baking powder
1 egg
1/4 tsp Salt

Topping

chopped pecans




Preparation

Heat oven to 400 degrees. Grease 12 medium muffin cups. Mix milk, oil, orange peel and egg in a large bowl until well blended. Stir in the remaining ingredients, just until moistened. Fill muffin cups . Sprinkle pecans on top. Bake 15 to 20 minutes or until wooden pick inserted in center comes out clean.


Some of my visitors may wonder that I have used eggs. Well eggs are very essential part of baking. For making cakes, cookies, bread, brownies, scones etc, eggs become very mandatory. I thought of starting a separate blog for my baking and use of eggs, but it would be too much of work for me. So I have started a separate option in my Recipe box to the right called the International/ Egg-etarian recipes. All my bakery stuff will be added there now on.

It's funny how blueberry is the standard fruit muffin, probably more popular than any other, yet strawberry is just as great a choice.
These look lovely.

As far as eggs go, they are, as you noted, essential for baking. There is no better binding and texture agent. I know there are fully vegan cakes out there, but I have no idea how they do it.

Sharmi, I love those discarded library books too, that's why I keep collecting those cookbooks!:))
Eggs are absolutely essential in baking.Vegans never get the good texture without egg although they never know bcos they never eat anything baked with egg!
Strawberry muffins are yum.

I have made muffins with blueberries. Just as Susan says, it is a standard and binds my creativity.. Same goes for raspberries and cupcakes. Strawberries are to be dipped in chocolate ;)

Those pecans are peeking out... Lovely!

Even I made strawberry muffins just yesterday sharmi but mine was eggless. They came out too good this time.Will try our recipe next time. I don't like the smell of egg.So,I prefer eggless ones even though I eat some ready made store bought cakes sometimes.see my blog for the eggless ones recipe

Shammi, they look really good. I've only made them with blueberries before... have to try this with strawberries. Will frozen work too or will only fresh do?

I love those sales. Here, our library has put several old women's mags on sale for 50 paise but nobody's buying them, probably because they're all american/english and it's not too easy to get the ingredients here.

Sharmi I too use eggs for cakes.But there are a few eggless recipes also for people who dont want eggs. It is just their choice!

Cake is any day good as we just need to mix and keep for baking. Yours look delicious! and the Strawberry looks yummy! We dont get them easily here :(. Thanks for sharing a nice recipe!

Sharmi, strawberry muffins look delicious..Coming to eggs, I guess there is no other agent to replace eggs...I have tried everything from bananas to egg replacer to besan. Nothing worked till now...
